Cooking tips:

  • Serve medium rare for a tender and juicy finish.
  • Marinate prior to cooking and cook for 3-4 minutes each side.
  • Allow to rest for 5 minutes before serving.
  • Pairs nicely with citrus, vinegars, wine, olive oil, flavoured butters and rich umami flavours e.g. tomatoes, jus, soy, oyster sauce.

      Best medium rare, cooks a bit more when resting being so lean so keep an eye on it cooking and rest it for a few mins. Really nice seasoned in a Morrocan rub.

      Kangaroo strip loin

      The Australian meats are all excellent quality, beautifully prepared products.
      For those hesitant to cook these game meats like these step loins, I recommend my method, light salt and leave out on a plate for at least 2 hours prior to cooking, these require an intense heat to flash cook them, a searing cast iron griddle pan is good, my favourite is in the fire box of my slow combustion wood heater on a long barbecue fork over red hot coals. A minute each side and out into foil and wrap in oven mits and put in a warm place to rest about 5 minutes. Then when the rest of the meal is plated , on a wooden board with a sharp carving knife, slice thinly across the loin at a 20° angle to the board surface. Fan the slices on the plate and drizzle with the juices. Enjoy the best meal ever!

      Meat is incredible tender and tasty, used a George foreman grill, 2 minutes 30 seconds. rested for 1 minute in foil, was a little less than medium rare. Second time I have ordered this, doubled up the order this time and will definitely be ordering again. I have also had the Venison in a couple of different cuts plus rabbit pieces and small goods, highly recommend them all.
