Amazing that I can order such different meats and have them delivered all the way to the Central Coast NSW.

I’ve always wanted to try Venison, but never had the opportunity to harvest it myself. The rack of venison from Spring Ridge arrived as promised on the website and was well packaged in a cardboard box and insulated bag, with a couple of freezer blocks for additional safety. Not the most environmentally friendly packaging, but it’s easy to see why it was necessary.
I was surprised at how soft the meat felt, very different to store bought beef or lamb.
I used the recipe on the Australian Meats website and the results were amazing. Cooked to medium rare the meat was tender like lamb, with a flavour somewhere between lamb and beef. Big thumbs up!! All the family loved it, except my wife who is still traumatised by the opening scene of Bambi :-)
Also purchased the smoked fillet which was spectacular, but be warned, it is very rich. To be taken in small portions if you have the self control!!
