Marinated it for 24 hrs then grilled both sides to light black over a charcoal grill then dumped it onto a thick layer of leek in an oven dish with water salt and pepper mixed in. Sat it over the charcoal grill with a loose lid to funnel the smoke and heat over it for about 2 hrs. Best flavours Iv tasted for years. Wild and a bit gamey and moist but not fatty. A feast.
Could not be more happy with the quality of this product. Extremely tender and juicy if cooked up properly. Will become a staple in my cooking.
