The mince was quite wet and mushy, not able to hold form as well as the boar, I wonder if it wasn't minced so fine whether it could keep better in the freezer?

Ethically harvested venison tenderloin is lean and flavoursome, ideal for pan frying or sliced for stir-fries. Wild venison is sourced from the forest and mountain ranges of South Australia and NSW. The deer are wild harvested in their own environment reducing stress and producing a mild, tender and consistent eating quality meat.
Cooking tips:
- Use a simple marinade of olive oil, garlic, rosemary and freshly cracked salt and pepper.
- Slice in to strips and add to a stir-fry.
- Best cooked medium rare on high heat.
- Allow to rest for 5 minutes before serving.
