I don’t know what to expect - wild venison salami! From the first thin slice I could tell that it would be very good. Good gamey, natural taste, not too fat, not too many spices to spoil the naturalness. Took some to friends’ Sunday family dinner, received with great acclaim even by children. Have purchased more to keep on hand. Well done.

For a community event on Australia/Survival Day, I cooked 20kgs of kangaroo tail and was extremely impressed with the quality of the meat. The cuts were consistent, with nice chunky pieces that held together perfectly. Slow-cooked for over 10 hours in a tomato-based curry, the meat became rich, tender, and full of flavour. Many people trying kangaroo for the first time were pleasantly surprised, and we received a lot of compliments on how beautiful the meat was.
