It's really disappointing to say that an Aussie business FAILS to pass quality control on an exceptional meat but sadly this is the second "piece". Labelled rump roast you expect, and packaging suggested, a roast. Sadly there were 2 pieces 'stacked' on top so until the pack was opened, we had no idea that we had 2 pieces stacked together to look like a roast. Each piece being slightly thicker a "crappy minute steak". Unfortunately we'll take our business elsewhere as 2 out of 3 cuts so far have been totally disappointing. I hate leaving this review BUT there's some serious learning needed on the supplier's behalf. A roast is NOT 12-15mm thick!!!
The venison backstrap was tender and juicy. I marinated it in homemade sauce for a few hours and then pan-fried it for 3 minutes each side. The meat was very tasty and juicy.
Good cut for roasting, just enough fat to avoid drying out. Tastes somewhere between lamb and wild boar.
