SOLD OUT - Fresh off the recognition of Executive Chef Connor Bishop’s debut menu by the Australian Good Food Guide, boutique Adelaide Hills winery and restaurant Anvers Wines will take part in this year’s Tasting Australia festival with a one-night-only dining experience celebrating premium wild meats from Australian Meats.
Taking place on 9 May 2026, the sold out event Rewild is an intimate long-table dinner held at the Anvers Wines estate in Kangarilla, where guests will reconnect with nature through a seasonal five-course menu designed by Bishop.
Presented as part of the Tasting Australia festival and in collaboration with Australian Meats, the event will showcase premium wild Australian proteins including Spring Ridge venison, Thornwood wild boar and Paroo kangaroo, paired with estate-grown Anvers wines in a curated dining experience highlighting the region’s landscape and produce.
Set amongst towering gums at the architecturally designed Anvers venue, the dinner explores the concept of “rewilding” and a return to natural food sources and a deeper connection between ingredient, land and plate.
The evening begins with sparkling and canapés before progressing through a multi-course menu that reflects Bishop’s produce-driven culinary philosophy and the surrounding environment of the Adelaide Hills.

explore wild Australian ingredients through a thoughtful and immersive dining experience.
“Rewild is about bringing people closer to the ingredients and the landscape they come from. Wild Australian proteins have a depth and character you don’t find anywhere else, and the menu has been designed to let those ingredients speak for themselves while pairing them with wines grown right here on the estate. It’s also about the experience of sitting together around one table, sharing a meal that reflects the land around us and the producers behind it.”
Guests will be seated at a single long table, with Bishop personally introducing each course and sharing the story behind the ingredients and producers featured throughout the evening.

Tickets for Rewild include a luxury coach transfer from Tasting Australia Town Square in
Adelaide, as well as all food and wine for the evening. With only 40 seats available, the event offers a rare opportunity to experience Bishop’s award-recognised cooking in an intimate setting surrounded by the vineyards and bushland that inspire it.
