My question is was it frozen the way it felt and looked it was. Lots of water in the bag. I did roast it medium, cor temperature 62c. It was a bit dry. I do understand not much fat present. I could tried to make escalopes or small steaks very quickly panfried and the outcome would have been better I think. I sliced it very thinly and typed it with a vinaigrette with baby capers etc.
It was very nice.

had high hopes for this piece of meat. Slow roasted for 8 hours as per a recipe….was tough as old boots.
This was a repeat purchase. I have been waiting ages for the new supplies of underground mutton. The box was delivered on time and all still frozen enough for me to place some straight to the freezer for later. I highly recommend Aust Meats, but perhaps don't buy too many rabbits. I don't want them running out of stock. LOL
The venison leg was beautiful and tender. Cooked medium rare we thoroughly enjoyed it. Will definitely buy it again.
