WHAT YOU'LL NEED
● 500g Paroo Kangaroo Minute Steaks
● Oil
● 1 cup plain flour
● 1 egg, beaten
● 1 cup panko breadcrumbs
● 1 cup cornflakes, crushed
● 2 tsp smoked paprika
● 1 tsp oregano
● 1 tsp garlic powder
● 50g grated parmesan
● Salt and pepper
● Olive oil, for cooking
HOW TO COOK IT
Prepare the crumb
In a bowl, combine panko, crushed cornflakes, smoked paprika, oregano, garlic powder, parmesan, salt and pepper.
Crumb the kangaroo
Coat each piece of kangaroo in flour, then dip into the beaten egg. Press firmly into the crumb mixture to achieve an even coating.
Cook
Heat neutral oil in a pan to approximately 180C. Cook schnitzels for 2 minutes on each side, or until golden and cooked through. Cook in batches if needed.
Serve
Serve with your favourite gravy, air-fried chips and a fresh side salad. Finish with extra parmesan if desired.
