WHAT YOU'LL NEED

    Selection of Australian Meats wild smallgoods such as:

    • Wild Boar Salami
    • Spicy Wild Venison Salami
    • Paroo Kangaroo Smoked Fillet
    • Black Pepper and Garlic Venison Mettwurst
    • Wild Venison Chorizo

    You will also need:

    • Red grapes
    • Blackberries
    • Cornichons
    • Creamy Blue Cheese
    • Balsamic drizzle
    • Candied pecans
    • Extra virgin olive oil
    • Good quality runny honey

      TO PREPARE THE BOARD

      Slice meats thinly and arrange on a large board or plate along with fruit, torn blue cheese, candied nuts, cornichons and drizzle with balsamic glaze, olive oil and honey.

      Good crusty break pairs nicely here too as does a nutty cheese like aged Pecorino or Parmesan broken in to chunks.
