This was my childhood in France revisited! My grandfather shooting deer and my grandmother roasting it. Wow, your meat is just fantastic. I slow cooked the shoulder roast. Lots of garlic, bacon and red wine. Superb . I roasted the back strap very briefly , to keep it rare on the inside. Delicious. Tomorrow I will slow cook the osso bucco , no doubt it will be fantastic!
